Resepi Apam Polkadot Kukus

Saya mencari - cari resepi apam polkadot akhirnya terjumpalah resepi di blog Cik Tom. Tambahan pula, resepinya berdasarkan sukatan cawan so senanglah bagi sesiapa yang takde sebarang alat sukatan.

Sumber asal resepi: shell@myresepi

Bahan-bahan untuk masak apam polkadot ( 50 biji papercup medium )

• 3 biji telur dari peti sejuk (gred A)
• 275 gm tepung gandum (anggaran 2 1/2 cawan)
• 220 gm gula halus (anggaran 1 cawan)
• 150 ml susu segar/ susu cair (anggaran 3/4 cawan)
• 3 sudu kecil baking powder
• 1 sudu kecil ovalette**
• 1 sudu kecil esen vanilla
• filling blueberry/ strawberry/ apa-apa ikut citarasa yang disukai
• pewarna

** Nama panggilan lain bagi ovelette adalah quick 75. Ia berwarna oren atau kuning dan  
     teksturnya seperti gel.Ovalette merupakan pengemulsi atau penstabil yang digunakan
     untuk membuat kek span dan kek-kek yang menggunakan telur sebagai bahan untuk
     melembutkan kek.
** sudu kecil = sudu teh
** filling ialah inti bagi apam.

Cara-cara penyediaan apam polkadot

1. Masukkan telur, gula dan ovalette ke dalam mangkuk mixer dan pukul dengan kelajuan maksima sehingga kembang dan menjadi putih.

2. Selepas tue, baru campur bahan2 lain seperti masukkan susu, tepung+baking powder (yang telah diayak) dan esen vanilla dan mix lagi dengan kelajuan minimun sehingga sebati.

3. Bahagikan adunan kepada beberapa bahagian,kemudian titiskan pewarna water based mengikut pilihan.

4. Masukkan setiap adunan berwarna ke dalam piping bag.

5. Picitkan adunan ke dalam mangkuk kertas (setengah/separuh sahaja).

6. Letakkan filling secukupnya (nak senang masukkan dalam plastik kemudian picitkan).

7. Picit lagi adunan sama atau warna berbeza sehingga hampir penuh.

8. Last sekali dot-dot kan dengan warna pilihan,kemudian kukus dengan api kecil/sederhana selama 10-15 minit atau sehingga masak.

Tips tambahan untuk buat apam polkadots dari Blogger Cik Tom

1. Untuk mengelakkan filling melekat bawah apam (sebabnya filling terlalu cair). So cara untuk keraskan filling ialah first panaskan 1 sudu besar butter/marjerin. Pastu masukkn anggaran 1 sudu besar tepung gandum. Kacau hingga nampak tepung tu mendidih. Pastu masukkn jenis filling/jem yang nak guna. Kacau hingga sebati dan pekat. Kalau rasa keras sangat, boleh tambah sedikit air. Kalau lembik, boleh tambahkn lagi filling/jem.

2. Sebelum masukkan adunan ke dalam piping bag, kacau adunan sehingga kelihatan sebati dan licin (tiada lubang angin) untuk mendapatkan permukaan apam yg rata dan tidak berlubang.

3. Kukus apam dengan api sederhana. Kalau api besar akan menyebabkan apam polkadot akan merekah.

4. Bungkus alat kukusan dengan kain untuk mengelakkan air menitis ke dalam adunan apam ketika mengukus.

5. Selepas siap kukus dan agak2 apam dah sejuk simpan dalam bekas kedap udara. Apam akan jadi keras jika terdedah lama pada udara.
